Prawn Bruschetta with lemon zest

Bruschetta topped with garlicky prawns lemon zest and rocket makes such an easy starter or light lunch, especially if you’ve got a crowd to feed.

  • Combine prawns, zest of lemon, garlic and a splash pf olive oil in a bowl and set aside for at least 30 minutes
  • Preheat cooking space with Hot air + steam 220 degrees
  • Slice bread on an angle 3 cm thick. Brush or spray bread slices with olive oil and sprinkle with salt and pepper.
  • Arrange bread on oven rack and place in preheated cooking space and bake for 6 mins.
  • While bread is baking, place prawns on a separate tray lined with baking paper and add into hot cooking space in the last 3 minutes.
  • Stir together aioli, lemon juice and pepper in a bowl.
  • Spread each piece of toast with some aioli and top with rocket and 3 prawns


6 slices                    good quality crusty bread-stick

18 large                   green prawns, peeled – tails optional

½                             lemon zest

1 clove                    garlic, crushed or finely chopped

1 tbsp                      olive oil

1 cup                        aioli, good quality with egg yolk

½                             lemon juice

Pinch                       black pepper

3 cups                      rocket

Cooking Instructions

V-ZUG Hot air + steam 220 degress for 6 minutes
